St. Patrick’s Day is coming up, and that means it’s time to make some yummy traditional Irish foods while listening to fun Irish tunes!
Although it’s not South Beach Diet friendly, I saved this dish as a cheat day treat at an impromptu Irish dinner party with the neighbors.. because St. Patricks Day isn’t St. Patrick’s Day without potatoes and cabbage!
Colcannon (meaning “white-headed cabbage”) is a traditional Irish dish of mashed potatoes with cabbage. Potatoes and cabbage have been staple foods in Ireland for ages – during Medieval times these ingredients were readily available to the common man. This classic Irish dish is believed to have originated as early as 1735, but the first reference to “colcannon” is known to be in Cassell’s Dictionary of Cookery in 1875.
There are many variations of colcannon out there – some including kale instead of cabbage, some with leeks, and some with bacon. In this recipe, mashed potatoes, along with milk and butter, are added to cabbage that has been cooked with green onions until tender. The result is a bowl of comfort, perfect alongside a corned beef dinner.
How to Make a Traditional Irish Colcannon
You Will Need
1 head finely shredded green cabbage
1 bunch of green onions, chopped
Water (enough to cover the greens)
5 pounds of potatoes, cooked and mashed
1 ½ sticks of butter
1 cup heavy cream
Salt and freshly ground pepper to taste
How to Make It
Place the cabbage, green onion, and water in a saucepan or Dutch oven and quickly bring to a boil. Reduce heat, cover, and simmer until tender.
Add the mashed potatoes, milk, butter, salt, and pepper. Mix well, stirring often until heated through. Serve warm as a side dish.
A traditional way to serve colcannon is to mound it on a plate, create a well in the center, then add a pat of butter to the indentation. Enjoy!
OMG…this sounds incredible!! We always love to have corned beef and cabbage at this time of year but I’ve never tried this!!

I’m crazy about potatoes, especially mash potatoes so Colcannon is totally a dish for me. I love that you are doing the South Beach Diet and seeing results, it’s so exciting. I’m a huge fan of cabbage but I’ve never had this dish, I know I will love it.
This dish set me back a bit!!! I haven’t lost any weight since eating it, but have maintained so… yay? haha!

Your potatoes are to die for. All that butter on top….I mean…the word “butt” is right in there, hehe. Seriously, I don’t skimp on butter or heavy whipping cream and actually just lost another 5 pounds. GO figure. And I eat like a horse (or so my mother-in-law tells me). And yes, we always have corned beef and hash with Brussel Sprouts and potatoes! I’ll be making these!!!!
