This is what I made myself for lunch today while trying to nurse myself through whatever bug I seem to have caught (congestion, headaches, sore throat and nausea… yay!) It was super soothing and hit the comfort food spot, all while fitting nicely into my healthy eating plans.
How to Make 15 Minute Black Bean Chili
Ingredients:
1 yellow onion, diced
Water
2 cloves garlic, minced
16 oz. cooked, rinsed black beans
8 oz. crushed fire-roasted tomatoes
1/4 cup chili powder
2 teaspoons ground cumin
1 teaspoon dried oregano
3 tablespoons minced fresh cilanto
1 lime
How to Make:
Over medium-high heat, saute the onion until most of the pieces are significantly browned. Add a thin layer of water and quickly stir the onion. Cook until the water evaporates, stirring constantly.
Reduce the heat to medium and add the garlic, stirring for 1 minute.
Add the black beans, tomatoes, chili power, cumin, and oregano, mixing everything together. Simmer for 5 minutes.
Remove the pot from the heat and then add the cilantro and the juice from the lime and stir.
