It’s Cinco de Mayo today! My family and I love a good excuse to have a celebration, so we always spend Cinco de Mayo enjoying our favorite Mexican recipes and drinks and have our annual viewing of The Three Amigos (hey, it’s a tradition!)
This year I decided to crack out my great-grandmothers 1963 copy of Better Homes and Gardens Holidays and Celebrations cookbook and cook from the Mexican dishes section. Holy 1960’s! These recipes are VERY…. American. lol. But it’s vintage and I can’t help myself.
So in case ya’ll were craving some Mexican Fried Rice with BACON.. here you go! And Happy Cinco de Mayo!
You Will Need:
- 1 cup long grain rice
- 1 cup hot water
- 1 cup beef broth
- 6 slices of bacon
- 1 cup tomato sauce
- 1 orange bell pepper, finely diced
- 1 onion, finely diced
- 1 clove garlic, minced
- 1/2 teaspoon cumin seed
- Cook the bacon until crisp and reserve the drippings. Crumble the bacon and set aside.
- Add rice, bell pepper and garlic to the bacon dripping and cook until rice is lightly browned.
- Add the bacon crumbles and remaining ingredients. Cook and cover over low heat, stirring occasionally, till rice is done and liquid is absorbed (about 25-30 minutes).
This looks good!
