Jonathan and I discovered this recipe when we first moved into our new house. We were in full moving in work mode, but we didn’t want to miss a chance to entertain guests in our new home! So I found myself looking for quick and easy appetizers and recipes that would allow me to get my hostess jollies out, while not tying me up with lots of kitchen prep time.
Whenever we host friends and family, we always strive to provide something beyond the cliché chips and dip or crackers and cheese. There’s nothing wrong with these snack options, of course, but it’s always nice to put a special touch on appetizers when hanging out with friends.
So when I discovered this recipe, I was hooked! It offers all the convenience of a quick run of the mill cheese and crackers appetizer, but it has enough panache to present a thoughtful and well put together dish. Pair with your favorite white wine and viola! Your friends will have no idea it took you less than 10 minutes to prepare this dish! It’s pretty much an instant classy evening with friends, with virtually no extra work in food prep / clean up!
Be warned though – it goes quickly! The sweet apricot preserves with the gently melting brie scoops easily and makes a wonderfully dessert quality bite that keeps guests coming back for more!
Apricot Almond Brie
1 8 to 10 ounce wedge or wheel of Brie cheese
1 tablespoon of Grand Marnier liqueur
½ cup of apricot preserves
1 tablespoon of toasted sliced almonds
1. Remove the rind from the cheese and place on a serving plate.
2. In a small saucepan, combine the liqueur with the preserves and heat until hot, but do not boil.
3. Spoon the sauce over the cheese and sprinkle toasted almonds on top. Serve with crackers or chips.

It looks absolutly delicious! Give me some! I long for Brie and can’t wait until I am allowed to eat it again… In Sweden pregnant women are recommended to avoid Brie and unpasteurized milk products… I will keep this in mind 🙂
We have the same warnings here, but the chance of contracting listeria when the milk product is fresh, clean and handled in a sanitary manner is SUPER rare.. so I don’t deprive myself of the nutrients and healthy bacteria of non-pasteurized cheeses when pregnant. It’s a personal decision, some people think I’m crazy, haha! 😉
We tend to like guacamole and salsa around here, although I have a very “old fashioned” dip that has pimento cheese and deviled ham and mayo. It sounds awful when I describe it, but it takes great with Fritos:) This looks perfect for my book group…
I’m not very domesticated so I have nothing to share except chips and salsa. Or chips. if I really really like you I might (MIGHT) share my ice cream (but don’t count on it). 🙂

Doooo this!! Lol, it seriously is SO EASY.. I suppose if you wanted to be really lazy you could even microwave the apricot preserves (like my husband did yesterday when the cheese got cold and wasn’t melting to his liking, haha!)
