Hubby and I are eating our way through all of the Disney Theme Parks cookbooks, and I was happy to find some yummy, easy, and classic breakfast dishes from the parks!
This particular dish is super cheesy, super creamy and way tasty! It is from The Crystal Palace at the Walt Disney World Resort in Florida, an all you can eat buffet featuring classic American dishes. The Crystal Palace also serves as a meet and greet location for Winnie the Pooh characters, all set in a gorgeous, Victorian style atrium. Aaaaaand, the dishes are all prepared before you in the onstage kitchen.
These potatoes are stupid easy to whip up, and they end up a creamy mass of goodness topped with a bubbling ocean of cheese. (Yeeeeah, boy!) And they reheat well! Enjoy!
Crystal Palace: Cheddar Breakfast Potatoes
*serves 6-8
Ingredients:
4 cups shredded Idaho potatoes
1 cup sour cream
1 cup heavy cream
2 cups shredded cheddar cheese
2 teaspoons salt
1 teaspoon freshly ground black pepper
Directions:
1. Place shredded potatoes into a large mixing bowl. Add in sour cream, heavy cream, 1 cup of the shredded cheddar cheese and salt & pepper. Mix gently until well incorporated.
2. Place into a greased or buttered casserole dish and bake at 350 degrees for 35 minutes.
3. Top with remaining cup of cheese and return to oven for 10 more minutes or until cheese is melted.
Why yes, that IS an ocean of cheddar cheese! YUM!!!

How did I not know Disney park cookbooks were a thing? I swear I need to revisit as an adult because it would be such a different experience. I love picking up cookbooks as souvenirs too. Whenever I cook from them, it transports me back to that place. And just looking at this cheesy potato bake has me feeling all warm and cozy! …And hungry! lol
