Okay, so I have one more St. Patricks Day dish to share with ya’ll!
This recipe is STUPID EASY and is a perfect dish for a St. Pattys Day get together. Boiled dinners like this one are the epitome of comfort foods. They are full meals made in a single pot and include everything you need for a delicious family-style dinner complete with meat, potatoes, and lots of vegetables.
The hearty beef brisket is slow cooked with leeks, carrots, and potatoes. Two bottles of beer are added to give depth and richness to the broth without lending any beer flavor it seriously makes the whole dish. Even if you dont like beer (I personally hate the stuff!) you cannot skip this step!
It all comes together in no time at all. (You will, however, have to let this cook for at least 3 1/2 hours, so it’s ideal for the weekend when the whole clan can get together and enjoy it.)
How to Make a Traditional Irish Boiled Dinner
What You’ll Need
3 1/2 poundsbeef brisket
2 (12-ounce) bottles beer
2 cups water (or enough to cover the brisket, this really varies!)
2 bay leaves
10 blackpeppercorns
1/2 cup chopped parsley
2 teaspoonssalt
2 tablespoons butter
3 cloveschopped garlic
2 cupschopped leeks
1 large yellow onion
3/4 pound large carrots (peeled and cut into large pieces)
3/4 pound small redpotatoes(whole and unpeeled)
1 dash salt (or to taste)
1 dash black pepper
How to Make It
- Place an 8- to 10-quart Dutch oven on the burner. Add the beef, beer, water, bay leaves, peppercorns, parsley, and salt.
- Heat a separate frying pan and add the butter or olive oil.
- Saut the garlic, leeks, and yellow onion until translucent and transfer to the Dutch oven.
- Bring to a boil, then reduce the heat and put a lid on the Dutch oven. Simmer gently for 3 1/2 hours or until the meat is very tender. (This will normally take about 1 hour per pound of brisket.)
- In the last 25 minutes of cooking, add the carrots and red potatoes, salt and pepper.
- Thinly slice the meat and serve with the vegetables and pot juices. Enjoy!

I made corned beef this week because it’s on sale and we hardly ever find it at such a good price.
It’s cuz of St. Patricks Day… hubby wanted me to stock up in the deep freezer, lol!

my parents would make this every st patricks day growing up, and i loved it. i’m pretty sure (jk i know) my brother wasn’t into the boiled carrots, but there’s something so cozy and comforting about them.
