So I know I’ve mentioned it about 500 times now – but brace yourself for 501 because – I’m going to Hawaii in just 25 days!!!! So I am feverishly cooking my way through Hawaiian recipes, with an emphasis on vintage recipes.
This recipe for a Hawaiian Fruit Salad with Orange Dressing is from Coco Palms Resort on Kauai, from the 1964 Better Homes and Gardens cookbook “Famous Foods From Famous Places”.
The Coco Palms Resort was a historic hotel located on the east coast of Kauai, Hawaii. It was first opened in 1953 and quickly became a popular destination for tourists from all over the world. The resort was built on the site of a former coconut plantation and featured over 400 guest rooms, a swimming pool, and a restaurant. It was also famous for its lush tropical gardens and the beautiful lagoon that surrounded it.
One of the most famous events to take place at the Coco Palms Resort was the wedding scene from the movie “Blue Hawaii,” starring Elvis Presley. The resort was also a favorite spot for celebrities, including Frank Sinatra, Bing Crosby, and Julie Andrews.
Unfortunately, the Coco Palms Resort was severely damaged by Hurricane Iniki in 1992 and has remained closed ever since. There have been attempts to restore the hotel over the years, but as of now, it remains abandoned.
Now, as for the recipe for the Coco Palms Fruit Salad with Orange Dressing, here it is!
Ingredients:
– 1/3 cup orange juice
– 1/4 cup pineapple juice
– 1/3 cup oil
– 1/2 tablespoon rice wine vinegar
– 2 tablespoons sugar
– Pinch of salt
– Pinch of dry mustard
– Dash of hot sauce
– Assorted tropical fruits for the fruit salad
Instructions:
1. Whisk together the orange juice, pineapple juice, oil, rice wine vinegar, sugar, salt, dry mustard and hot sauce to make the dressing.
2. Pour the dressing over the fruit and toss gently to coat.
3. Chill the salad in the refrigerator for at least 30 minutes.
This salad is a perfect way to enjoy the tropical flavors of Hawaii and is sure to be a hit with your family!
